House of Cupcakes Expanding in Area

The Princeton-based cupcake bakery is opening a franchise location in East Brunswick later this winter.

Princeton's popular House of Cupcakes on Witherspoon Street will open a new location in East Brunswick this winter and plans to expand to New York City in the near future. 

House of Cupcakes  offers dozens of flavors of homemade cupcakes. The bakery won "Cupcake Wars" on the Food Network a few years back, and is a popular shop in Princeton.

Ruthie Bzdewka, who owns the store with husband Ron, said plans are to open an East Brunswick location in late February or early March. But that's not the only expansion on the horizon for House of Cupcakes. There are plans to open additional locations in Manhattan and the Bronx, Ruthie Bzdewka said.

"We have someone interested in expanding," she said. "The man who is investing in us is a friend who took Party City to 500 franchises. He's been looking for something else to franchise and happened to stumble onto my store."

Bzdewka and her husband, Ron, once worked for, and later owned, a Party City franchise, then sold it after their kids were born. Now that their cupcake business has exploded, their business has caught the eye of their former boss.

"It's all happening so fast, but that's where we're headed," Ruthie Bzdewka said.
